Haloumi, Watermelon and Pomegranate Salad with PCV Dressing

This vibrant salad is a celebration of contrasts — the salty richness of grilled haloumi, the cool sweetness of watermelon, the jewel-bright pop of pomegranate, and a Sinar Brew dressing that ties it all together with a bright, tropical tang.

This is the kind of salad that looks as good as it tastes — and it comes together in under 20 minutes. The Sinar Brew PCV dressing is the star: a blend of pineapple cider vinegar, extra virgin olive oil, fresh orange juice, and yuzu syrup that lifts every element of the dish.

Ingredients (serves 2–3)

For the salad:

  • 2 deseeded and chopped cucumbers
  • 1 bunch of fresh watercress, roughly chopped
  • A handful of fresh mint leaves
  • Seeds of 1 pomegranate
  • 1 garlic clove, grated
  • 200g haloumi, grilled and chopped
  • ½ deseeded watermelon, chopped

For the dressing:

  • 5 capfuls of Sinar Brew Pineapple Cider Vinegar
  • Same amount of extra virgin olive oil
  • Juice of ½ an orange
  • 1 teaspoon yuzu orange syrup (or substitute with a little honey and extra orange juice)

Method

Combine the cucumber, watercress, mint, pomegranate seeds, and grated garlic in a large bowl. Grill the haloumi in a hot pan until golden on both sides, then roughly chop and add to the bowl. Add the watermelon pieces. Whisk together the dressing ingredients and pour over the salad. Toss gently and serve immediately.

Why It Works

The acidity of Sinar Brew PCV cuts through the richness of the haloumi and balances the sweetness of the watermelon and pomegranate. The yuzu and orange bring a citrus brightness that complements the tropical character of the pineapple vinegar. It is a salad that genuinely earns its place on the table — and one that delivers a dose of gut-friendly goodness with every bite.
