The answer lies in how and where it’s made.
Our vinegar is fermented and aged in Thailand’s warm climate, where temperatures hover around 25–27°C. These conditions gently accelerate natural flavour development over time. As the pineapple ferments, its natural sugars, amino acids, and organic compounds slowly interact, creating subtle layers of depth and complexity.
From a scientific perspective, this evolution is driven primarily by the oxidation of natural pineapple polyphenols and the gradual polymerisation of organic compounds, which deepen colour from golden to amber and build a rounder mouthfeel. At the same time, fermentation produces esters and organic acids that balance fruity aroma with a clean, refreshing tang. Slow, low-temperature reactions between sugars and amino acids also contribute to caramel-like notes.
Unlike processes that rely on heat or additives, Sinar Brew is unfiltered and unpasteurised, so these natural reactions continue in the bottle. Over time, this leads to increasing mellowness, softer acidity, and greater flavour integration.
The result is a vinegar that evolves—becoming smoother, deeper, and more complex with age.
From fruit to fermentation to tropical ageing, every bottle reflects a living process—crafted by time, temperature, and the richness of pineapple.
